Black bean burgers

  Everyone loves a good burger and your health doesn't have to be compromised for one!  These burgers are healthy, delicious, and super easy to make.   I recently read about the harmful ingredients in the pre made burgers and decided it's just not worth it to take shortcuts.  Besides homemade ones taste better and they take hardly any time to make!  To make these burgers you will need





2 cans of black beans (preferably organic)
2/3 cup of quick oats
ketchup
1 onion chopped
1 clove of garlic minced
a handful of sundried tomatoes (about 1 cup chopped)
3/4 cup of frozen corn
salt, pepper, and cumin

Preheat your oven to 400 degrees and line a baking sheet with parchment paper or grease it.  Then open the cans of beans and rinse and drain them.  Pour into a large bowl and mash them.




Then add onion and garlic, sundried tomatoes and corn and mix it all together.  Throw in a few squirts of ketchup and add salt, pepper, and cumin to taste.  I added a couple of tablespoons of cumin that adds lots of flavor!





Once that's combined add oats and mix it all together.




Form mixture into 8 equal patties and place on baking sheet. 





Bake in oven for 10 minutes and carefully flip burgers.  They will be somewhat loose just squash them down a little when you turn them over to help them stay together.  Bake another 5 minutes so it's crispy on both sides.  When you remove them from the oven let them stand about 5 minutes to firm up.  Then place on roll and enjoy!  These would be fantastic with guacamole or avocados but I didn't have any on hand.  I just topped them with a little pepperjack Daiya vegan cheese and served them with some sweet potatoes on the side. 






  The good thing about making a batch of 8 is you have leftovers!  These freeze great so you can grab one and microwave it for a quick meal later.  Gotta love a meal that will feed you twice!  Enjoy :)
